Fasolia (Green Beans & Carrots) from Enat

Abbe, the owner and manager of ENAT, has kindly contributed his recipe of Fasolia, Ethiopian Green Beans and Carrots. This is the mildest dish you can find in Ethiopia. It is made from ingredients which are widely available at your local grocery stores.

Fasolia, Ethiopian Green Beans and Carrots 

Ingredients:

2 oz vegetable oil

sliced onions

1/2 teaspoon finely minced garlic

water

snapped green beans

cut carrots

1 teaspoon tomato paste

1/4 teaspoon black cardamom

jalapeno peppers

1/4 teaspoon corriander

water as needed

salt to taste 

Method:

Start with a hot skillet and 2 oz vegetable oil. Sauté the onions until translucent, almost to a point of caramelizing, Add 1/2 teaspoon finely mashed garlic and a teaspoon tomato paste. Stir vigorously to combine. Add a little water to prevent garlic from drying out. Add the main ingredient, green beans. Continue to stir vigorously. Add carrots. Add a little more water. Add cardamom and coriander. Reduce heat and allow to simmer for 1/2 hour to 45 minutes, adding water as needed. Stir the peppers and salt to taste before serving the dish. Serve hot with injera bread.
