I prefer making my own breads. That way, I can avoid preservatives, genetically modified ingredients and can taylor it to my tastes. I also like to grind my own grains so that they are very fresh when I use them. Flour becomes rancid quickly, but whole grains stay fresh for a much longer time. If you don’t want to bother with grinding your own, keep your flours in the freezer until you need them and they will keep longer.
